At a MIke-Bruce concert in Copenhagen some years ago (40th anniversary of their first Cph gig, actually), they paid tribute by singing, "I wish they all could be... Copenhagen girls!"

Big cheer from the audience. I too thought it was a nice gesture. Plus Copenhagen starts with C and has four syllables, sings just as well.

Any other examples of Beach Boys changing lyrics in concerts to make a point?

Al did this at the show I saw:

Only problem is he said Cincinnati and not Cleveland (or more correctly, Cuyahoga Falls). But this seems to be a trend with anytime an artist tries do something like this. Saw Bruce Springsteen and he said Columbus numerous times through the night, but one time he told us to make some "Columbia" party noise prior to playing Sherry Darling.

Back in the 70's when Bian would sing "Back Home", he would often substitute "Ohio" for whatever city they were playing in.
