So I think we should give these tracks names for documentation sake.

I was expecting the "truck driving man" isolated vocal from Cabin to be one of the bonus tracks.  I don't remember hearing it on the box or am I missing it?

Yes, at the very end of the Workshop session

I didn't realize they were a part of the same track - weird, since they clearly weren't recorded at the same session, or even in the same year.

Well, no Baldwin, no Smiley Smile version as far as I'm concerned! I know about the differences between the original mixes and the nex stereo ones, but the only one that's really bothering me is the H&V stereo mix. To me, it's definitely lacking something crucial without the Baldwin.
